Recipe Ingredients for Grilled Spinach And Tomato Stuffed Turkey Breasts

1 lb turkey breasts, skinless boneless
2 garlic cloves
1/2 cup of reduced fat jack shredded cheese
1 tomato
1 cup baby spinach
2 t olive oil
1 salt and pepper to taste

Recipe Directions for Grilled Spinach And Tomato Stuffed Turkey Breasts

  1. Pre-heat the BBQ or grill.

  2. Fillet each turkey breast lengthwise, so that it folds open like a book. Be sure not to cut all the way through the breast.

  3. Finely mince each garlic clove and distribute evenly between the four turkey breasts by coating the inside flaps with garlic. (Approximately a clove of garlic per breast)

  4. Grate the skim milk cheese, and distribute equally among the inside portions of the breasts. Be sure to spread the cheese out so that it coats each breast evenly.

  5. Slice the tomato into inch round and than cut each round in half. Place two tomato halves inside each breast with the straight edge of the tomato facing the joined wall of the meat.

  6. Cover the tomato slices with two or three spinach leaves.

  7. Fold the turkey breasts back together and use two skewers to close each breast.

  8. Coat the outside of breasts with olive oil and place on the grill or BBQ.

  9. Cook until no pink can be seen and the outside of the breasts have browned from the grill.

  10. Remove from the heat and serve.
