Grilled Snapper with Prawns, Mango and Chilli Salsa

Recipe Ingredients for Grilled Snapper with Prawns, Mango and Chilli Salsa

24 oz red snapper
2 tablespoons Extra Virgin olive oil
1 teaspoon Salt
1 teaspoon pepper
1 tablespoon Parsley
2 chili peppers
4 oz prawns
1/2 cup mango
1 clove garlic (small)
4 spring onions
2 tablespoons lime juice
1 avocado

Recipe Directions for Grilled Snapper with Prawns, Mango and Chilli Salsa

  1. Method:

  2. Light the barbeque 30 minutes prior to cooking the fish.

  3. For the Salsa, cut the chillies in half lengthwise and scrape out the seeds (leave ribs and seeds in for more heat).

  4. Thinly slice and mix together with all the other ingredients.

  5. If you are cooking on a stove-top, put a ridged cast-iron pan over a high heat, or pre-heat the grill to high.

  6. Brush the snapper both sides with the olive oil and season well with salt and pepper.

  7. Cut fillets into 3 on the diagonal.

  8. Cook pieces of snapper either skin-side down on the iron pan or barbeque, or skin-side up under the grill, for 3-4 minutes.

  9. To serve, spoon the salsa onto 4 plates and arrange the fish on top.

  10. Drizzle a little oil around the edge of the plate and garnish with parsley or corianer sprigs.
