Recipe Ingredients for Grilled Snapper with Black Olives & Tomatoes

3 tomatoes, chopped
1 tsp garlic, minced
2 tsp olive oil, light extra virgin
1 1/3 black olives, chopped
1 tbsp red onion, chopped
1 tsp red wine vinegar
1 lb red snapper
1/4 tsp salt
1/4 tsp black pepper

Recipe Directions for Grilled Snapper with Black Olives & Tomatoes

  1. Combine everything except the last three ingredients

  2. Brush fish with remaining oil and season with salt and pepper

  3. Grill or broil for 10 minutes, or until fish is cooked

  4. Add the tomato and black olives mix, and cook for another 3 minutes

  5. Serve with brown rice mixed with wild rice, or roasted potatoes, or pasta with pesto
