Dinner on the grill. If using dried herbs use 1 tsp instead of 2.

Recipe Ingredients for Grilled Shrimp & Zucchini

1/4 cup extra virgin olive oil (not light)
1/4 cup white wine
2 tsp. minced fresh oregano
2 tsp. minced fresh basil
2 cloves minced fresh garlic
1 tsp. lemon zest
1 tbs lemon juice (fresh)
1/2 tsp. cajun spice
1 lb. large shrimp
1 large zucchini, cut into chunks

Recipe Directions for Grilled Shrimp & Zucchini

  1. Mix first 8 ingredients. Marinate shrimp 1-4 hours.

  2. Par cook zucchini chunks.

  3. Skewer and grill 3-4 mins per side.
