Really good! From EatingWell.com. The sauce uses canned roasted red peppers, but I opted to roast my own since red bell peppers were on sale this week - roasted extra for future use! You can use red wine vinegar or sherry vinegar if you prefer. Great for entertaining - just make the sauce ahead of time!

Recipe Ingredients for Grilled Salmon & Zucchini with Red Pepper Sauce

1/3 cup sliced almonds
1/4 cup red peppers, roasted, chopped
1/4 cup tomatoes, diced
1 clove garlic
1 tablespoon extra-virgin olive oil
1 tablespoon rice vinegar
1 teaspoon smoked paprika
12 oz salmon steaks
2 medium zucchini

Recipe Directions for Grilled Salmon & Zucchini with Red Pepper Sauce

  1. Preheat grill.

  2. Process almonds, peppers, tomatoes, garlic, oil, vinegar, paprika, 1/4 tsp salt, and 1/4 tsp bepper in food processor or blender until smooth; set aside.

  3. Coat salmon and zucchini (and/or summer squash) on both sides iwth cooking spray, then sprinkle with salt and pepper. Grill, turning once, until the salmon is just cooked through and the squash is soft and browned, about 3 minutes per side.

  4. Transfer the squash to a clean cutting board. When cool enough to handle, slice into 1/2" pieces. Toss in the bowl with ahlf of the reserved sauce.

  5. Serve with 3 oz of salmon topped with sauce and grilled baguette bread.
