  1. Ingredients

  2. 2 teaspoon rosemary, fresh, minced

  3. 2 teaspoon extra-virgin olive oil

  4. 2 clove(s) garlic, minced

  5. 1 teaspoon lemon zest, freshly grated

  6. 1 teaspoon lemon juice

  7. 1/2 teaspoon salt, Kosher

  8. 1/4 teaspoon pepper, black ground

  9. 1 pounds fish, salmon fillet, center-cut, skinned, cut into 1-inch cubes

  10. 1 pint(s) tomato(es), cherry

  11. Recipe Tip:

  12. To oil the grill rack: oil a folded paper towel, hold it with tongs and rub it over the rack. (Don't use cooking spray on a hot grill.)

  13. Make sure to buy omega-3 rich wild-caught salmon instead of farm raised.

  14. Preparation

  15. 1. Preheat grill to medium-high.

  16. 2. Combine rosemary, oil, garlic, lemon zest, lemon juice, salt and pepper in a medium bowl. Add salmon; toss to coat. Alternating the salmon and tomatoes, divide among eight 12-inch skewers.

  17. 3. Oil the grill rack (see Tip). Grill the skewers, carefully turning once, until the salmon is cooked through, 4 to 6 minutes total. Serve immediately.
