4 tsp. olive oil 2 small apples, peeled, thinly sliced 2 Tbsp. apple juice 1/2 tsp. cinnamon 1/2 tsp. nutmeg, ground 1/4 tsp. black pepper 2 tsp. honey 1 1/4 lbs. pork loin 1 1/3 cups brown rice, cooked Sugar substitute, as desired.

Recipe Directions for Grilled Pork Loin with Apple Compote

  1. 1. Heat oil over medium-high heat in a medium-size skillet. Add the apples and saute 5 to 7 minutes or until apples begin to soften.

  2. 2. Reduce heat to low and add apple juice, cinnamon, nutmeg and pepper to apples. Bring mixture to a low simmer, stirring frequently.

  3. 3. Remove skillet from heat, adding honey to the apple, and sugar substitute if desired, for a sweet tasting compote. Hold warm.

  4. 4. Grill or roast pork tenderloin to desired temperature. Slice into 4 even servings.

  5. 5. To plate, portion 1/3 cup of rice on plate. Place pork next to rice and top with a portion of the warm apple compote.
