I couldn't find flank steak as orig recipe called for so subbed eye of round steak. I sprayed cooking oil on the polenta (which I made from scratch and used a lesser quantity than original recipe) My nurtitional info came out higher in calories than stated on recipe so I made those changes and made 5 servings instead of 4.

Recipe Ingredients for Grilled Polenta with Spicy Steak - Cooking Light June 2010

117 g corn grits
2 1/2 c water
1 t canola oil
3/4 t kosher salt
1/2 t cumin
1/2 t chipotle chili powder
1/4 t black pepper
1 lb eye of round steak
1/2 avocado
1/2 c coriander leaves
2 oz queso fresco
1/2 c salsa

Recipe Directions for Grilled Polenta with Spicy Steak - Cooking Light June 2010

  1. Mix oil , 1/2t salt, cumin, chili powder and pepper and rub over steak.

  2. Heat grill pan over med high heat and add steak.

  3. Cook 6 min per side or until desired doneness. Remove and let stand 5 min.

  4. Cut steak diagonally across grain into thin slices.

  5. Spray polenta slices with cooking spray and sprinkle with 1/4 t salt.

  6. Add to pan and cook 3 min per side or until lightly browned.

  7. Arrange polenta, steak, cilantro (corriander leaves) queso fresco, and salsa on plates.

  8. Serve with lime wedges if desired.
