Polenta is basically grits that have congealed. Very yummy.

Recipe Ingredients for Grilled Polenta with Mushroom Topping

4 cups water
1 cup cornmeal
1/4 cup olive oil
1 pound mushrooms
1 small onion
2 tablespoons chopped garlic
1 tablespoon basil

Recipe Directions for Grilled Polenta with Mushroom Topping

  1. Bring water to boil. Slowly add cornmeal stirring constantly. Lower heat and cook for 20 minutes until polenta becomes very thick.

  2. Spoon polenta into sheet pan to 1/2 inch thick and let cool

  3. While polenta cools sautee remaining ingrediants over high heat until mushrooms are soft.

  4. Cut polenta into 6 squares and place on lightly oiled baking sheet. Broil on both sides until golen brown.

  5. Top with mushroom sauce and serve.
