Roasted potato salad with cherry tomatoes, beans, and basil Adapted slightly from Fields of Greens. Fields of Greens grills the potatoes until "golden and crisp" after roasting and before assembling the salad, and serves the final salad with greens and Nicoise or Gaeta olives.

Recipe Ingredients for Grilled New Potato Salad (from Fields of Greens)

2 lbs new potatoes
1/3 lb green beans
1/2 pint cherry tomatoes
2 T vinegar
6 T olive oil
1/2 c basil
1/2 t salt
1 clove garlic

Recipe Directions for Grilled New Potato Salad (from Fields of Greens)

  1. Preheat the oven to 400 degrees.

  2. Cut potatoes into bite-size pieces, toss in a baking dish with a little olive oil (I used about 1 T) and sprinkle with a few pinches of salt and pepper. Cover and roast until tender, about 35 to 40 minutes. Set aside to cool.

  3. While the potatoes are roasting, remove the stem ends from the beans and cut them in half diagonally or leave whole if they're small. Bring a small pot of water to a boil and add 1/2 tsp. salt. Drop the beans into the water and cook until just tender, about 3 to 4 minutes, depending on their size. Rinse under cold water and set aside to drain.

  4. Cut the cherry tomatoes into halves or leave whole if small.

  5. Make the vinaigrette - combine 2 T vinegar, 5 T olive oil, basil, salt, and garlic in a blender and blend until smooth. Makes about 1/2 c.

  6. Toss potatoes with the beans, cherry tomatoes, and vinaigrette. Adjust the seasoning, if needed, with a splash of Champagne vinegar and salt and pepper. Loosely arrange the greens on a platter, spoon the vegetables over, and garnish with the olives (calorie count does not include olives).

  7. Serve 4.
