Recipe Ingredients for Grilled Mozzarella & Roasted Red Pepper Sandwich

1 tbsp olive oil, vinaigrette (or prepared Italian salad dressing)
2 slices wheat bread, Italian low fat
1 tbsp basil leaves, fresh
1/3 cup red peppers, roasted, rinsed drained and patted dry
2 oz mozzarella cheese, non fat

Recipe Directions for Grilled Mozzarella & Roasted Red Pepper Sandwich

  1. Brush dressing on one side of 1 bread slice; top with basil, if desired, peppers, cheese and remaining bread slice. Lightly spray both sides of sandwich with cooking spray

  2. Place large nonstick skillet over medium heat until hot. Add sandwich; cook 4 to 5 minutes or until cheese melts and sandwich is golden brown
