Recipe Ingredients for Grilled Monterey Jack and Corn Quesadillas

4 oz Monterey Jack cheese, grated
1 cup frozen corn, thawed
2 tbs reduced fat mayonnaise
2 tablespoons chopped parsley or cilantro
2 scallions , thinly sliced crosswise
1 tbs chopped chipotle chiles
1 tbs adobo sauce
4 flour tortillas

Recipe Directions for Grilled Monterey Jack and Corn Quesadillas

  1. Stir together cheese, corn, mayo, scallions, cilantor and chiles ina small bowl. Spray torillas on one side, fill, fold and grill, 2 at a time, until cheese is melted (about 4 minutes per batch)

  2. Serves 2 to 4
