This recipe was found somewhere online, uploaded by Irene Fong on June 25, 2012. "Just in case you're wondering, kofta, also called kefta or kufta, is a popular dish in Moroccan, Middle Eastern and Southeast Asian cuisines. It is usually made of ground meat, vegetables and/or legumes and is often cooked on a skewer or formed into meatballs. There is an endless number of combinations you can make and I have never encountered a version that I didn't like. This recipe is a Mediterranean twist on a classic recipe and is great served with pita, Greek salad and homemade tzatziki."

Recipe Ingredients for Grilled Mediterranean Turkey Kofta (Irene Fong)

1 1tsp Olive Oil
1 medium (2-1/2" dia) Onions
3 cloves Garlic
4 tbsp Basil, Fresh
0.25 cup Parmesan, Grated Cheese
1 serving Sun Dried Tomatoes
1 tsp Rosemary, Dried
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
450 grams Ground Turkey, 93% Lean

Recipe Directions for Grilled Mediterranean Turkey Kofta (Irene Fong)

  1. In small skillet, heat oil over medium-high heat. Add chopped onion; cook, stirring, until softened, about 5 minutes. Add minced garlic and cook until fragrant, about 1 minute. Pour into bowl and allow to cool, about 15 minutes.

  2. Stir in chopped basil, Parmesan, chopped and drained sun-dried tomatoes, rosemary, salt and pepper. Add turkey and mix with hands until well combined.

  3. Divide into 8 portions; form each into long oval shape. Thread onto metal or soaked bamboo skewers.

  4. Place on greased grill over medium heat; close lid and cook, turning once, until meat is no longer pink and digital rapid thermometer inserted into meat reads 160F (71C), about 10 minutes.
