Marinated 1-4 hours and grilled. Great as main course, or as part of a salad or pasta.

Recipe Ingredients for Grilled Marinated Chicken Breast

16 ounces boneless skinless chicken breast
1 tablespoon white wine (use 1/4 cup in recipe*)
1 tablespoon lemon juice (use 1/4 cup in recipe*; can use lime or Dijon mustard instead)
2 tablespoons olive oil (use 1/2 cup in recipe*)
1 teaspoon tarragon (or lemon thyme)
1/2 teaspoon chopped garlic
1/2 teaspoon ground black pepper
1/4 teaspoon sea salt, fresh ground

Recipe Directions for Grilled Marinated Chicken Breast

  1. * use 1/4 cup each of wine and, juice, and 1/2 cup olive oil for marinade and basting. Remaining marinade will be discarded, thus for calorie counting purposes, I've reduced the amount in the recipe to reflect the amount typically discarded.

  2. Place chicken breast(s) between sheets of plastic wrap or in ziplock bag, and pound lightly with meat mallet to tenderize, but not flatten.(This step isn't necessary with smaller trimmed breasts.) Wisk remaining ingredients together, and place in gallon size ziplock bag along with chicken, turning to coat. Place in refrigerator and allow to marinade for 1-4 hours, turning several times. When fully marinated, heat grill to medium, and cook chicken breasts, turning and basting with remaining marinade once or twice. Internal temperature should reach 150-155 degrees. Remove from heat and allow to sit for 10 minutes (temperature continues to rise slightly).
