Recipe Ingredients for Grilled Jamaican Shrimp and Pineapple (Curves Protein 2)

3 tbsp. Pineapple Juice
2 tbsp. Low Sodium Soy Sauce
1 1/2 tsp. Finely Chopped Fresh Ginger Root
1 tsp. Minced Garlic
1 tsp. Ground Allspice
1 lb. Large Shrimps
1 Sweet Red Pepper
20 oz. Pineapple Chunks

Recipe Directions for Grilled Jamaican Shrimp and Pineapple (Curves Protein 2)

  1. To prepare: Mince garlic. Peel and devein the shrimp. Chop bell pepper into 1"

  2. chunks. Drain the pineapple, and reserve 3 Tbsp juice.

  3. In a small bowl, combine pineapple juice, soy sauce, ginger, garlic, and allspice. Put shrimp and pepper chunks in a resealable bag or shallow glass bowl, add the pineapple-spice mixture, cover, and marinate shrimp in refrigerator for 30 minutes to 12 hours.

  4. When ready to grill, remove shrimp and peppers from the marinade, discarding marinade for food safety reasons. Thread shrimp, peppers, and pineapple chunks onto metal skewers, alternating them until all shrimp and peppers are used.

  5. Reserve extra pineapple chunks to serve on the side, or thread them on a skewer to grill.

  6. Grill or broil skewers for about 3 minutes per side or until shrimp is cooked through.

  7. Remove from skewers and serve with a salad.
