Grilled Chicken Breast Fruited, herbed quinoa salad

Recipe Ingredients for Grilled Herb Chicken Breast on bed of Quinoa Salad

1 cup quinoa
1 1/2 cups vegetable broth
1/2 red onion, diced
3 T balsamic vinegar
2 T olive oil
2 T mustard
4 cloves garlic, minced
1/2 tsp fresh ground pepper
1/8 tsp cayenne pepper
1 T honey
1 shredded carrot
3 stalks celery, finely chopped
1/2 cup roasted walnuts
1 cup dried cranberries
1/2 tsp black pepper
1 fuji apple, diced with skin on
1 oz. goat cheese
4 oz. arugula
4 oz. spinach
12 oz. chicken breasts, grilled
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground rosemary
1/4 tsp. black pepper

Recipe Directions for Grilled Herb Chicken Breast on bed of Quinoa Salad

  1. In medium saucepan combine quinoa and broth. Bring to a boil then reduce the heat to medium low and simmer for 10-15 minutes till moisture is absorbed and quinoa is cooked with cover. Remove from heat and leave covered for 5 minutes. Remove from pan and spread over cookie sheet to cool.

  2. Meanwhile, in shaker mixer or bowl with whisk, combine onion, olive oil, balsamic vinegar, mustard garlic, pepper, cayenne pepper, and honey. Whisk or shake and set aside.

  3. Season chicken breasts with paprika, garlic powder, onion powder, rosemary and black pepper. Grill on medium/high heat on gas grill for approx. 10 minutes per side. Check temperature to make sure they are at least 155 deg. before removing from grill. (They will continue to cook another 5 degrees after you remove them from the grill). Remove from grill and set aside while you toss the quinoa salad.

  4. Combine the cooled quinoa, chopped celery, apples, shredded carrot, roasted walnuts, and dried cranberries. Toss. Add dressing and toss again. Combine Arugula and spinach. Add chopped ingred. and toss gently.

  5. Service is approx. 4 oz. topped with a few goat cheese crumbles; slice chicken breast, into 4-5 slices and tile over top of quinoa salad.
