Grilled Ginger,Chili and Lime Cod with boiled Potatoe with a side of Tomato/Mushroom/Red Onion relish

Recipe Ingredients for Grilled Ginger and Chilli Cod

1 potato (2-1/2" dia, sphere) Potatoes, Boiled, Cooked In Skin, Flesh
0.5 tbsp Extra Virgin Olive Oil
0.5 cup chopped Red Onion
1 clove Garlic
1 Serving Mushroom Stir Fry
1 cup Tomatoes, Red, Ripe
186 grams Cod
25 g Salad Dressing

Recipe Directions for Grilled Ginger and Chilli Cod

  1. Boil potatos in their jackets

  2. Mix chili and garlic paste with lime juice to make a dressing.

  3. Pour this dressing over a piece of boneless fresh cod.

  4. Grill on high for 15 minutes

  5. While Cod is grilling, fry chopped tomato, mushroom, garlic, red onion, in extra virgin olive oil and cook on medium head until ingredients are soft.

  6. Throw in chopped Coriander and lime juice into the mixture with seasoning of low salt and black pepper. cook for a further 5 minutes.

  7. Serve with grilled cod and potatoe.
