Recipe Ingredients for Grilled Fennel salad

1/2 cup Walnuts
1 tsp Black Pepper
1 1/2 tbsp Sugar
1/8 cup Vinegar
1/2 cup Orange Juice
1/4 cup Extra Virgin Olive Oil
1/2 tbsp Dry Parsley
1/2 tbsp Basil Leaves
2 1/2 Fennel bulb
2 1/2 cups Mixed Greens
1 cup Mandarin Orange
1/2 cup Blueberries

Recipe Directions for Grilled Fennel salad

  1. Plan Ahead

  2. Slice fennel bulbs.

  3. Finely chop fresh basil.

  4. Candied Walnuts

  5. Heat a pan over low flame and add sugar and 1 tablespoon water to it.

  6. When the sugar melts add the walnuts to it and cook for 2 minutes or until they are caramalize.

  7. Set it aside and let it cool.

  8. Dressing

  9. In a large bowl, pour 1/2 cup of olive oil, orange juice, vinegar, black pepper and salt.

  10. Whisk the dressing for 5 minutes and keep it aside.

  11. Drizzle 1/4th cup of olive oil on the sliced fennel bulbs. Sprinkle salt and pepper on the bulbs. Grill the bulbs.

  12. Remove the bulbs from the grill and sprinkle dry crushed parsley on it. Let if cool for 5 minutes.

  13. On a large serving platter, spread the mixed greens.

  14. Arrange the grilled fennel , mandarin oranges, blue berries and candied walnuts.

  15. Pour the dressing over the salad just before serving.

  16. You can cook the fennel in the oven if you do not have a grill. Spread the fennel on a baking tray, drizzle olive oil and cook in the oven for 15 - 20 minutes at 375 F.
