Recipe Ingredients for Grilled Eggplant and Tomato "Sandwiches"

1 lb. eggplant
2 medium red onions
2 tbsp olive oil
1/4 tsp kosher salt
1/4 tsp ground black pepper
8 oz Brie cheese
2 large tomatos
1/2 cup fresh basil
1/4 cup white wine vinegar
1 1/2 tsp sugar
1/8 tsp kosher salt
1/8 tsp ground black pepper
1/4 cup olive oil

Recipe Directions for Grilled Eggplant and Tomato "Sandwiches"

  1. Cut eggplant, onion and tomatoes into 1/4" slices. Cut Brie (mozzarella, or other soft creamy cheese) into 6 slices. Prepare Basil Vinaigrette using last 6 ingredients.

  2. Basil Vinaigrette: In a food processor, combine 1/2 cup packed basil leaves, 1/4 cup white wine vinegar, 1 1/2 tsp sugar, 1/8 tsp kosher salt, and 1/8 tsp ground black pepper. With the motor running, slowly drizzle in 1/4-1/2 cup olive oil. Taste and adjust seasonings, if desired.

  3. Brush both sides of eggplant and onion slices with olive oil and season with salt and pepper.

  4. Grill onions on a rack of an uncovered grill directly over medium coals for 6 minutes. Turn onions. Add eggplant and crill 3 minutes. Turn eggplant over and continue grilling the eggplant and onions for 3 minutes more or until vegetables are tender and lightly browned.

  5. Lay a slice of cheese on top of 6 of the eggplant slices for the last minute of grilling, so the cheese begins to melt.

  6. To assemble: Place a slice of eggplant (without cheese) in the center of each of 6 plates. Top each with two slices of tomato (alternate red and yellow if available), an onion slice, and a slice of eggplant (cheese facing up). To each "sandwich" with onother onion slice. Drizzle with 1-2 tbsp of Basil Vinaigrette and serve.
