Recipe Ingredients for Grilled Eggplant with Rosemary

6 Japanese eggplants
2 cloves garlic, peeled and chopped
1/4 cup rosemary
1/4 cup soy sauce
1/4 cup olive oil

Recipe Directions for Grilled Eggplant with Rosemary

  1. Slice eggplant 1/2 to 3/4 inch thick and put in a large bowl.

  2. Put rest of ingredients in a food processor and puree until the rosemary is finely chopped.

  3. Pour puree evenly over the eggplant and mix to cover all of the eggplant.

  4. Oven roast at 425 F until eggplant are soft and limp, 30 to 45 minutes, turning once.

  5. Let eggplant cool slightly before serving.
