Recipe Ingredients for grilled eggplant

1 medium eggplant, sliced 1/4 inch
2 tbs olive oil
2 tbs balsamic vinegar
1 tbs panko bread crumbs
1 tbs bread crumbs, plain
1 tbs pesto
100 g mushroom, chopped
6 grape tomatoes
1 tsp garlic seasoning
1 tbs olive oil
3/4 cup pecorino cheese, grated

Recipe Directions for grilled eggplant

  1. slice eggplant 1/4 inches

  2. salt and drain on a towel 30 minutes

  3. rinse and dry

  4. in a bag mix 2 tbs oil and vinegar

  5. marinate eggplant 30 minutes

  6. grill 3 to 5 minutes a side

  7. mix bread crumbs and pesto set aside

  8. saute mushrooms, tomato and garlic in 1 tbs oil until cooked

  9. in baking dish layer eggplant, top with veggies, cheese & crumbs

  10. bake at 400 for 10 to 15 minute broil to brown
