Recipe Ingredients for grilled eggplant parmesan

2 eggplant, peeled (yield from 1-1/4 lb) Eggplant
2 tbsp Olive Oil
4 cup Tomatoes Whole Plum Italian Style
1/2 cup, chopped Onions
2 clove Garlic
2 tsp Basil Leaves
2 oz Parmesan, Grated Cheese

Recipe Directions for grilled eggplant parmesan

Peel and slice eggplant about 1/4 inch thick and salt both sides and place them in layers with paper towels in between to absorb the bitter juices for +/- 30 min. Remove the paper towels and brush both sides with a little olive oil. Grill them for a bout 2-3 minutes a side on med to high heat. Prepare your favorite tomatoe sace. Mine is sautee onion, garlic and a little olive oil for 5 min. and add 2 cans of italian tomatoes. Crush them with your hand in a bowl and add them in. Simmer for 30 min. stirring occasionally. Chop basil and add at the end. prepare the dish in a pan approx. 13x9 with tomatoe sauce at the bottom then a layer of grilled eggplant and a little grated parmesan cheese. Keep building layers approx 4 layers until you're done and bake covered for 45 min in a 350 degree oven. Remove cover and bake for another 15 min. Remove and let set for 20 min. before serving...enjoy
