Delicious lasagna without the meat

Recipe Ingredients for Grilled Eggplant Parm Lasagna

2 tablespoons olive oil
1 medium onion
2 cloves garlic
14 oz. plum tomatoes
1/4 t cinnamon
3 leaves basil
2 medium eggplant
2 cups cottage cheese, fat free
3/4 cup parmesean cheese
1 egg yolk
2 c. mozzarella cheese

Recipe Directions for Grilled Eggplant Parm Lasagna

  1. Pre-heat oven to 375* Place a medium pot over med to high heat with pan sprayed with olive oil, about 2T.

  2. Add the onion and garlic and cook until tender. Add tomatoes, cinnamon stick, salt, pepper aand basil. Simmer sauce until thickened, about 10 minutes. Brush eggplant slices with olive oil and grill, about 5 minutes. Combine cottage cheese, 1/2 c. parm. cheese and egg yolk. Spread a thin layer of sauce in bottom of baking dish. Top w/ a layer of eggplant and cottage cheese mixture. Eggplant, mozzarella, sauce, and eggplant. Spread remaining cottage cheese , top with mozzarella and sauce. And then with eggplant.
