A grilled eggplant dish, basted in a seasoned olive oil, and topped with fresh mozzarella, cherry tomato, sliced mushrooms, and fresh basil.

Recipe Ingredients for Grilled Eggplant with mozzarella, mushrooms, and tomatoes

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
3 tbsp Extra Virgin Olive Oil
1 oz Fresh Mozzarella
1 tsp Garlic Powder
1 tsp, ground Basil, Dried
5 leaves Basil, Fresh
4 oz Sliced Baby Bella Mushrooms Packaged
10 cherry Tomatoes, Red, Ripe

Recipe Directions for Grilled Eggplant with mozzarella, mushrooms, and tomatoes

  1. Slice an unpeeled eggplant

  2. Mix together olive oil and spices, except fresh basil in a bowl

  3. Coat on both sides of eggplant.

  4. Place on griddle or grill.

  5. Grill one side, flip over and top with 3 mozzarella pearls, and 1 cherry tomato sliced in half.

  6. While eggplant is grilling make room for mushrooms to grill at the same time.

  7. Let eggplant grill and cheese melt.

  8. As cheese melts take off and place on plate.

  9. Sprinkle with fresh basil.

  10. Top with grilled mushrooms.
