Fresh goat cheese, sun-dried tomatoes, and meaty eggplant make this sandwich flavorful and quite filling.

Recipe Ingredients for Grilled Eggplant and Goat Cheese Sandwiches

1 lbs eggplant (1 small)
1/3 cup vinegar,(bottled fat-free vinaigrette salad dressing)
4 oz goat cheese
4 sun-dried tomatoes, bottled, halved in oil, drained
1 tsp black pepper, freshly ground
6 oz French baguettes
1 tsp basil or spinach leaves

Recipe Directions for Grilled Eggplant and Goat Cheese Sandwiches

  1. Cut off and discard ends from eggplant. Cut lengthwise into 1/2" thick slices. Brush both sides of slices with 1/4 cup of the dressing

  2. Grill or broil 5 inches from heat source for about 12 minutes or until tender, turning once. While eggplant is cooking, crumble cheese into a small bowl, Chop tomatoes and toss with cheese. Add pepper to taste

  3. Cut bread in half lengthwise. Brush both sides of bread with remaining dressing. Place cut-side down on grill or cut-side up under broiler alongside eggplant for about 1 minute, until lightly toasted. Place eggplant on bottom halved of bread and sprinkle with the goat cheese mixture. Top with basil or spinach leaves; close sandwiches with top of bread

  4. Serving Suggestion: Serve with Kalamata or Niçoise olives
