Recipe Ingredients for Grilled Corn Salad

2 ears corn
2 tablespoons olive oil
1 tomato
1/4 cup red onion
2 cups lettuce
2 cups spinach leaves
1/4 cup parsley
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Grilled Corn Salad

  1. Grilled corn for about 10 minutes. Once corn has cooled, cut kernels off and place in medium bowl.

  2. Add diced tomato, diced red onion, lettuce, spinach, parsley, lemon juice, olive oil, salt and pepper.

  3. Toss to mix well.
