Grilled Veggies & Poached Chicken

Recipe Ingredients for Grilled Chicken & Veggie Quesadillas

1 Chicken Breast, poached and shredded
2 tbsp Fat Free Italian Dressing
1 cup Zucchini quaretered lenthwise
1 small Red Pepper
1 cup, shredded Cheddar Cheese
2 medium (4-1/8" long) Green Onions
1 oz Hungarian Pickled Banana Peppers
1 1tsp Olive Oil
4 Whole Wheat Tortillas

Recipe Directions for Grilled Chicken & Veggie Quesadillas

  1. Poach chicken in water. cool slightly and tear up.

  2. Quarter the zucchini lengthwise. Quarter and de-seed the red pepper, toss both in a bowl with Italian dressing. Preheat a two-sided grill for 5 minutes, place veggies on the grill close and cook for approx 7 minutes. Dice Veggies.

  3. Scatter veggies, cheese, onions and chicken over a tortilla and cover with another.

  4. Cook tortillas, 1 or 2 at a time in a non-stick skillet, about 3-4 minutes per side.
