Salsa Ingredients: 12 cherry tomatoes, halved 1/2 small red onion, finely chopped 1 jalapeno pepeer, seeded & dived 2T chopped fresh cilantro 1/4 cup frech lime juice 1/2 avocado Chicken ingredients: 4 boneless skinless chicken breasts, 4-6 oz each 1/2 cup non-fat plain yogurt 1/2 small red onion 1/4 cup fresh lime juice 1/4 cup fresh cilantro salt & pepper to taste Serves 4-6 people.

Recipe Ingredients for Grilled Chicken with Tomato-Avocado Salsa

4 breast, bone and skin removed Chicken, Breast, Meat Only
4 oz Voskos Greek Yogurt (Plain, Non-Fat)
0.5 medium raw Onion Red
0.25 cup Lime Juice
2 oz Cilantro
0.5 medium raw Onion Red
1 pepper Peppers, Jalapeno
1/4 cup Cilantro
0.25 cup Lime Juice
0.5 avocado, NS as to Florida or California Avocados

Recipe Directions for Grilled Chicken with Tomato-Avocado Salsa

  1. For the salsa:

  2. Combine tomatoes, red onion pepper and cilantro in small bowl. Chop avocado and sprinkle with 2T of lime juice to keep from browning. Add avocado & remaining lime juice to bowl and toss to combine (can be made in advance and stored in refrigerator for up to 1 day).

  3. For the chicken:

  4. in a small food processor, puree yogurt, red onion, lime juice and cilantro to make yogurt marinade. Transfer marinade to shallow bowl or plastic bag. Add chicken and coat well. Refrigerate for 1 to 8 hours. Pre-heat grill to medium high. Remove chicken from marinade, discard remaining marinade and season chicken with salt and pepper. Grill until cooked through, approx. 6 minutes per side. Serve with salsa.
