Recipe Ingredients for Grilled chicken with Spinach and melted mozzarella

1 1/2 lbs boneless skinless chicken breast
3 cloves garlic
10 oz Frozen Spinach
3 oz shredded mozzarella
1 roasted red pepper

Recipe Directions for Grilled chicken with Spinach and melted mozzarella

  1. pre heat oven to 400.season chicken with salt and pepper cook until no longer pink.

  2. heat a sautepan on med heat add garlic and oil.saute a few seconds. add spinach salt and pepper.cook until heated through.

  3. when chicken is done lay on baking sheet lined with foil for easy clean up.Divide spinach evenly between pieces and place on top.Then top each piece with half oz of mozzarella and roasted pepper and bake until cheese is melted(6-8 minutes)
