The garnishes make it Mexican. Cilantro, sour cream, cheese, avocado, salsa, black beans. Serve with tostados. Use canned tomatoes, and V-8 Juice! And maybe Tomato-Chicken Bouillon.

Recipe Ingredients for Grilled Chicken Soup, Mexican Option

1 onion
4 garlic cloves
1 1/2 tablespoon olive oil
2 cups diced tomatoes
2 cups tomato juice
4 cups water
4 bouillon cubes, chicken
2 carrots
3 celery stalks
1/2 mushrooms
16 ounces chicken breast
4 tablespoons lime juice
3 tablespoon dried basil
2 teaspoon kosher salt

Recipe Directions for Grilled Chicken Soup, Mexican Option

  1. Flay chicken breasts to make them thin. Marinate in half of lime juice, sprinkle with half of dry basil, and lemon pepper.

  2. Slice onions and garlic saute in oil.

  3. Add tomatoes and tomato juice, water and bouillon, bring to a boil and simmer 5 minutes or so.

  4. Slice rest of vegetables and add to soup, and simmer.

  5. While soup is simmering grill chicken. When vegetables are tender add sliced grilled chicken.

  6. Serve with garnishes.
