Easy, light meal in no time. If you are going to make it ahead, store the sauce in a separate container until you are ready to eat, otherwise the lettuce will get soggy.

Recipe Ingredients for Grilled Chicken Salad

120 grams Chicken
3 cup, shredded Lettuce, Cos Or Romaine
1 medium raw Plum Tomato
70 grams Corn, Sweet, Yellow
1 small (5-1/2" long) Carrots
100 grams Fat Free Plain
1 tbsp Ketchup

Recipe Directions for Grilled Chicken Salad

  1. Grill the chicken breast.

  2. Meanwhile, grate the carrot, dice the tomato and drain the corn.

  3. Mix everything in a salad bowl or hermetic container (if making ahead or taking to work).

  4. Let the chicken cool down a bit and dice it. Mix it in with the rest.

  5. In a small bowl or container mix the yogurt with the ketchup, some salt and pepper, and if you want, a dash of worcestershire sauce.

  6. Pour the sauce over the salad and serve, or store in separate containers until ready to serve.

  7. Alternative sauce:

  8. Instead of the ketchup, pepper and worcestershire sauce, you could add some curry powder to the yogurt. If so, you might add only the curry and salt, or pair it with mustard or a bit of lemon juice.
