Recipe Ingredients for Grilled Chicken Marinade (Mediteranian style)

1/2 cup soy sauce
1/4 cup olive oil
1/4 cup balsamic vinegar
2 T honey
1 tsp oregano
1/2 tsp basil
1/4 tsp garlic, crushed
1/4 tsp pepper
2 kg chicken breasts, meat only, halved (4 whole)

Recipe Directions for Grilled Chicken Marinade (Mediteranian style)

  1. Combine liquids and seasonings well in a non-reactive container (I like using a large plastic bag for this but any container with a lid will do). Reserve 1 tablespoon per serving for later, ~1/2 cup. Add chicken portions to marinade, cover and let stand in the refrigerator for at least 2 hours to overnight.

  2. Heat grill to medium-high. Remove portions and grill, turning once, for ~10 minutes or until the meat is no longer pink in the middle.

  3. Remove to plate and drizzle 1 tablespoon of the reserved sauce over the top of the chicken. Rice goes very well with this dish.
