Grilled Chicken with Avocado and Corn Salsa

Recipe Ingredients for Grilled Chicken with Avocado and Corn Salsa

1 lb. chicken breast
1 T. extra virgin olive oil
1/2 t. salt
1/2 t. pepper
1 medium avocado
10 oz. mexicorn
1/4 c. cilantro
3/4 t. salt
1 small red onion
1 clove garlic
2 t. lime juice
1/2 c. orzo
1 T. butter

Recipe Directions for Grilled Chicken with Avocado and Corn Salsa

  1. Coat chicken with olive oil, salt and pepper.

  2. Combine all remaining ingredients except orzo and butter to make the salsa. Toss and let sit for at least 30 minutes.

  3. Grill chicken, cool slightly and cube.

  4. Make orzo per instructions.

  5. Toss cubed chicken with orzo and butter (I used avocado butter but recipe analyzer doesn't recognize that). Top with salsa and serve.

  6. Can also be served plain or over white or brown rice and without the butter.
