Recipe Ingredients for Grilled Chicken with Apricot Glaze

1 cup peanut oil
200 oz chicken breast, boneless, skinned
1 quart apricot preserves
1 cup soy sauce
1/4 cup ginger root
1 T garlic powder
1 T red pepper flakes

Recipe Directions for Grilled Chicken with Apricot Glaze

  1. Place chicken breasts in single layer in shallow pans.

  2. Combine other ingredients in mixer bowl with whip attachment. Mix at medium speed until blended. Pour over chicken breasts. Cover. Refrigerate for at least 12 hours. Remove from marinade. Reserve marinade. Cook at high heat on preheated grill for approximately 5 to 7 minutes on each side. Baste frequently with reserved marinade. Serve hot.
