Grilled Chicken Adobo Recipe

A very tasty "cuban" style marinated chicken breasts flavored with lime, cumin and garlic. Best cooked grilled over a hot natural-charcoal fire.

Recipe Ingredients for Grilled Chicken Adobo

1/2 cup onion, chopped
1/3 cup lime juice
6 cloves of garlic, coarsely chopped
1 tsp dried oregano
1 tsp ground cumin
1/2 tsp dried thyme
1/4 tsp ground red pepper
1 1/4 lb (3 - 4) boneless chicken breasts
3 tbsp chopped cilantro

Recipe Directions for Grilled Chicken Adobo

  1. Combine onion, garlic and lime juice in a food processor. Process until onion is finely minced. Transfer to a resealable storage bag. Add oregano, cumin, thyme and red pepper; knead bag until blended. Place chicken in bag, press out air, and seal. Turn to coat chicken in marinade. Refridgerate for at least 30 minutes but no more than 4 hours (the lime juice can make the chicken rubbery if marinated for longer).

  2. Spray grill with non-stick cooking spray. Prepare grill for direct grilling. Remove chicken from marinage and discard marinade. Place chicken on grill 3 - 4 inches from medium-hot coals. Grill 5 - 7 minutes each side or until chicken is no longer pink in the center. Transfer to a serving platter and sprinkle with chopped cilantro.
