Great quick and easy use of left over grilled chicken.

Recipe Ingredients for Grilled Cheese Quesadilla

2 flour tortillas
3 oz. chicken
1 1/2 oz. cheddar cheese
1/2 tbsp canola oil
1 spray of Pam

Recipe Directions for Grilled Cheese Quesadilla

  1. Slice chicken into thin strips and place in skillet with 1/2 tbsp of canola oil, cook on low and add your preference of seasonings. (I use taco seasoning). Spray another skillet (larger than your tortillas) with Pam and place one tortilla in it. On top of that tortilla place 1/2 of the cheese. Cook on medium until cheese starts to melt and tortilla begins to puff up. Quickly add chicken, remainder of cheese and second tortilla and flip quickly and carefully. Finish cooking until the second tortilla is browned. Cut into quarters and enjoy.

  2. Goes great with guacamole, sour cream, or salsa or just enjoy it plain.
