Grilled Butternut Squash Recipe

A bit of creativity on the part of the cook transforms a typical grill-out into an epicurean feast. Experiment with planning an entirely grilled meal. You really can grill everything - from cheese, to main dish, to sides, to dessert!

Butternut squash is a tasty grilled treat that cooks up quickly right along with the main dish. This beautiful orange veggie is a major win for health as it is chock full of fiber, manganese, magnesium, niacin, potassium, and a number of vitamins from A to E.

Gather friends and family, start the coals, and grill a beautiful informal meal and savor the time spent with family and friends. Recipes like this one make your grill-out healthy and delicious. 


Grilled Butternut Squash

Nutrition facts for four servings and reflects that fact that only a bit of the oil remains on the squash.

Grilled Butternut Squash Recipe


1 Butternut Squash

2 T Olive Oil

3 T lemon juice, fresh squeezed

1/4 t cracked black Pepper

Pinch sea salt

1 T Chili Powder (your favorite brand)

2 t cumin

2 t garlic powder

1 t paprika

1/4 t cayenne

1 T fresh cilantro, finely chopped

Optional: five spice seasoning, Srirachi sauce, ginger


Combine the seasonings, lemon juice, and oil in a small bowl. Light the coals in your grill. 

Rinse the squash well and slice a bit off at the large bulbous end. Remove the seeds and pulp. Slice into 1/2 to 3/4 inch rounds (yes, leave the skin on, it’s tasty and nutritious!). Or slice in half vertically, scoop out the pulp and seeds and proceed as directed, allowing longer grill time.

Rub both sides of the squash slices with the marinade. Let the squash sit at room temperature while the grill heats up. 

Grill for about 8-10 minutes on each side, or until browned and softened. Test with a fork. 

Note: If you prefer squash without even a background hint of spice, give this a try!
