Hearty Blue Marlin steaks take a bath in classic French flavors.

Recipe Ingredients for Grilled Blue Marlin with Grainy Dijon Vinaigrette

2 lb swordfish steaks, cut to 4-8 oz steaks about 1 inch thick
3/4 c Apple Cider vinegar, Normany
1/4 c Dijon mustard, grainy country
2 T honey
2 T extra virgin olive oil
1/8 t salt
1/8 t fresh ground black pepper
1/8 t garlic powder
1 dash cinnamon
1 dash nutmeg
1 dash marjoram

Recipe Directions for Grilled Blue Marlin with Grainy Dijon Vinaigrette

  1. Preheat grill.

  2. Whisk together the vinegar, mustard, honey, olive oil and seasonings in small bowl.

  3. Place the fish and marinade in a self-sealing plastic bag. Refrigerate for up to 1/2 hour.

  4. Drain the fish, pouring the marinade into a small pan. Heat marinade on side of grill.

  5. Rub grill with a raw potato or spray grill with non-stick cooking spray. Grill fish 4-5 minutes on each side, brushing with reserved marinade.
