This recipe is derived from Stephen Pyles' cookbook, Southwestern Vegetarian. The original recipe calls for roasted garlic puree (which really makes the dish), but it also calls for 1/2 cup grated parmesan cheese. Parmesan cheese is not vegetarian. It's never vegetarian. So I've omitted it here. This is best served with Tomatillo-Jalapeno Chutney (also a Stephen Pyles recipe) and roasted vegetables.

Recipe Ingredients for Grilled Blue Corn Polenta Cakes

4 1/2 cups vegetable broth
2 jalapeno peppers, seeded and minced
1 tbsp garlic, minced
2 cups cornmeal, blue
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1 tsp olive oil

Recipe Directions for Grilled Blue Corn Polenta Cakes

  1. In a saucepan, bring the stock, jalapenos, and garlic to a boil. Slowly stir in the cornmeal. Reduce heat to low and continue stirring. Cook over low heat, stirring often, for 15 minutes; the polenta should be the consistency of mashed potatoes.

  2. Remove from the heat. Stir in the bell peppers and season with salt to taste.

  3. Grease a 9"x12" pan with the olive oil. Spread the polenta into the pan and refrigerate until firm (35 to 45 minutes).

  4. Prepare the grill.

  5. Cut the polenta into 3" squares then cut the squares into triangles. Place the triangles on the grill over medium-high heat. Cook for 3 to 4 minutes per side, or until fully cooked through.
