Try 1 large courgette in place of the aubergine. Almonds can replace the pine nuts.

Recipe Ingredients for Grilled Aubergines with Red Pesto

1 eggplant, thinly sliced
15 g basil leaves
15 g parsley
15 g pine nuts
1 garlic clove, crushed
4 pieces sun-dried tomatoes
1/2 tbsp tomato puree
2 tbsp olive oil
25 g Parmesan cheese, freshly grated
1 salt
1 pepper

Recipe Directions for Grilled Aubergines with Red Pesto

  1. Place the eggplant slices in a single layer on the rack in a grill pan and grill until golden. Turn around and repeat for the other side.

  2. Make the red pesto: process the basil, parsley, pine nuts, garlic, sun-dried tomatoes, tomato puree and oil in a blender or food processor, until smooth.

  3. Add the Parmesan and seasoning and blend briefly.

  4. Serve the hot eggplant slices with the red pesto spooned over or alongside. Garnish with basil springs.
