Recipe Ingredients for Griddled Beef Fillet with Horseradish Sauce

1 teaspoon fresh rosemary
1/10 teaspoon sea salt
1 teaspoon ground black pepper
1 tablespoon olive oil
450 g beef steaks
1 clove of garlic

Dressing:
2 tablespoons creme fraiche
1 tablespoon grated horseradish (fresh or jarred)
1/10 teaspoon sea salt
1/10 teaspoon ground black pepper
3/10 teaspoon lemon juice
1 tablespoon extra virgin olive oil

Recipe Directions for Griddled Beef Fillet with Horseradish Sauce

  1. To prepare your beef and sauce:

  2. Put a griddle pan on a high heat and let it get screaming hot

  3. Pick the rosemary leaves off the woody stalks and finely chop

  4. Mix with a good pinch of salt and pepper and scatter over your clean board

  5. Drizzle olive oil over both sides of the steaks and roll them in the rosemary and seasoning

  6. Put the creme fraiche and horseradish into a small bowl with a pinch of salt and pepper

  7. Havle your lemon and add a squeeze of juice to the bowl

  8. Add a splash of extra virgin olive oil and mix well

  9. Taste and add a little more horseradish if you think it needs to taste more fiery
