Aubergine marinated in oil, salt, garlic and balsamic vinegar, griddled to give a chargrilled effect, and finished off in the oven

Recipe Ingredients for Griddled Aubergine Slices

2 tbsp olive oil
1 pinch of salt
2 garlic cloves, peeled and crushed
1 tbsp balsamic vinegar
1 eggplant, (aubergine) cut into discs

Recipe Directions for Griddled Aubergine Slices

  1. Mix the oil, salt, garlic and vinegar and rub the slices with the marinade.

  2. Heat a griddle pan until hot. Griddle the aubergine slices for 3-4 minutes on each side.

  3. Transfer to a baking tray and cook on 180C in the oven for 6-8 minutes.
