Recipe Ingredients for Greg's Tomato Sauce

48 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
24 medium Onions
48 clove Garlic
24 serving Light Brown Sugar
12 serving Cooking Wine
12 serving VIGO EXTRA VIRGIN OLIVE OIL
12 tsp Oregano, Ground
12 Teaspoon Thyme
12 tsp, leaves Tarragon, Dried
12 tsp Rosemary
12 cup leaves, whole Basil, Fresh
12 serving, raw Cilantro
24 oz Parsley
12 serving White Pepper
12 tsp Sea Salt
12 tsp Curry Powder
12 tsp Paprika
48 tbsp Tomato Paste

Recipe Directions for Greg's Tomato Sauce

Peel, quarter and pulse garlic, tomatoes, onions and fresh herbs in a blender or food processor. Add to pot, mix in all remaining ingredients and stir to blend. Simmer covered 1-2 hours for best taste. Bring to rolling boil and allow to cool slightly before serving. This step makes oil collect at surface so it can be removed.
