Recipe Ingredients for Greg's Tomato Sauce

4 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 medium Onions
4 clove Garlic
2 serving Light Brown Sugar
1 serving Cooking Wine
1 serving VIGO EXTRA VIRGIN OLIVE OIL
1 tsp Oregano, Ground
1 Teaspoon Thyme
1 tsp, leaves Tarragon, Dried
1/4 tsp Rosemary
1/4 cup leaves, whole Basil, Fresh
1 serving, raw Cilantro
2 oz Parsley
1 serving White Pepper
1/4 tsp Sea Salt
1/4 tsp Curry Powder
1/4 tsp Paprika
4 tbsp Tomato Paste

Recipe Directions for Greg's Tomato Sauce

Blanche and skin tomatoes. Quarter and pulse in a blender. Repeat with onion, garlic and fresh herbs. Add to pot, then add all other ingredients. Simmer 2-3 hours on medium-low heat to reduce. Serve over whole-grain pasta or rice, or add water to thin and serve as tomato soup. Sugar and cooking wine can be left out if desired. Taste difference is minimal. If you bring sauce to a rolling boil then cool before serving, the oil will come to surface and collect, allowing you to remove it entirely and keep only the flavor.
