Quick & easy chili. Serving size is a little over a cup and a half. Great with some shredded cheese and sour cream on top. Add hot sauce to taste for heat & flavor.

Recipe Ingredients for Greg's Homemade Chili

2 cups red kidney beans
2 cups pinto beans
2 cups black beans
1 large onion, diced
1 bell pepper, diced
3 cups canned tomatoes, diced
1 1/2 cups tomato paste
3 cloves garlic
1 tbsp olive oil
2 tbsp chili powder
1 tsp salt
1 tsp pepper

Recipe Directions for Greg's Homemade Chili

  1. Saute onions, peppers and garlic in olive oil until just turning translucent. Don't let them get burnt or mushy.

  2. Open cans of beans and dump into a pot.

  3. Open cans of tomatoes and dump into a pot.

  4. Throw in the onions, peppers, and garlic you've sauteed.

  5. Throw in the chili powder, salt, and pepper. Increase seasonings to taste. (Cumin, Red Pepper Flakes, Cayenne Pepper, and Oregano are all good to throw in too - experiment!)

  6. Bring everything to a boil uncovered.

  7. Cover and turn down the heat

  8. Simmer for at least 30 minutes, but the longer you simmer the better the flavor.

  9. Freezes well.
