Recipe Ingredients for Greens Soup

200 grams Vegetable Bouillon
325 grams Broccoli
162 grams Carrots
190 grams Celery
3 cloves, raw Garlic
580 grams Tomatoes, Red, Ripe
120 grams Onions
545 grams Squash, Summer, Zucchini, Includes Skin
1 tbsp Olive Oil, Extra Virgin, Organic
2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 cup Quinoa
225 grams Mustard Greens

Recipe Directions for Greens Soup

Cook onion and garlic in oil for 2-3 minutes. Add sage and thyme. Add carrots, celery and broccoli. Cook 5 mins. Add tomatoes and 5-6 cups water with veg. bouillon. Cook 5-10 mins. Add red chili pepper flakes (or whole). Bring to a simmer. Add quinoa and cover for 10 mins. Add chopped zucchini, 3 tsp curry, chickpeas (or other legumes) and greens (mustard, kale, chard, etc.). Cook 5 mins.
