Lighter version of traditional southern recipe

Recipe Ingredients for Greens & Smoked Turkey

20 cups chopped collard greens (kale, mustard greens, or a mixtuer)
28 oz smoked turkey drumsticks, 2 legs (approx weight)
8 cups water
1 teaspoon salt
1 teaspoon lemon pepper

Recipe Directions for Greens & Smoked Turkey

Bring water and spices to a boil; add whole turkey legs. Add chopped greens in small batches, pushing down into water to make room for additional batches. Turn heat to medium low and simmer until tender, approximately 45 minutes. Remove turkey legs and trim meat from bones. Carefully sort through meat checking for small bones, and cutting into small pieces. Return meat to greens and serve hot.
