Recipe Ingredients for Greens and plantains with toasted almonds

1 plantain
1 lb collard greens
4 cups water
5 tbs olive oil
3 tbs cornmeal
1 tsp crushed brown mustard seeds
1 tsp crushed cumin seeds
1/2 tsp turmeric
1/4 tsp paprika
1 tsp brown sugar
1 tsp salt
3 tbs toasted slivered almonds
4 lime wedges

Recipe Directions for Greens and plantains with toasted almonds

  1. Cut Off the skin from the plantain and chop into small pieces.

  2. Bring the water to a boil in a large stock pot. Pack in the greens, reduce the heat , cover and simmer for 15 minutes. Drain well, pressing out excess moisture. Finely chop.

  3. Heat the oil in a large non- stick frying pan or wok over medium heat. add cornmeal, mustard seeds and cumin, fry stirring constantly until the meal darkens a few shades. Stir in the plantain salt and greens and stir-fry 2 minutes. Add turmeric, paprika, sweetener, salt and greens. Gently stir until hot throughout. Serve sprinkled with almonds and a citrus wedge.
