Classic Italian dish, healthy and low in fat. The greens and beans go well together, and the garlic gives it a great taste.

Recipe Ingredients for Greens and Beans

1 lb escarole
14 oz cannellini beans
1 tbsp olive oil
4 garlic cloves, crushed
28 oz fat free chicken broth

Recipe Directions for Greens and Beans

  1. Heat olive oil in a large skillet/pot and add crushed garlic.

  2. Sautee garlic until light brown, do not burn.

  3. Add the escarole and cook on medium heat until greens are wilted.

  4. Add in fat free chicken broth (depending on how soupy you want it) and can of beans.

  5. Let simmer on low heat for a few minutes to let it blend together.

  6. Add cooked pasta if you would like.
