Main course light dinner or veggie side dish

Recipe Ingredients for Greens and Beans

4 oz. butter
4 oz. butter substitute
4 cloves garlic
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
16 oz. cannellini beans
1/2 c. white wine
1 tsp. lemon juice
2 oz. butter substitute
1 tsp. chicken bouillon

Recipe Directions for Greens and Beans

  1. Cut and wash three heads of escarole. In medium frying pan, over medium heat, combine olive oil, 8 oz of butter, and garlic. Cook for 2-3 minutes. Add escarole and season with salt and pepper. Cook until limp. Add beans, and one oz. of french sauce (recipe below). Cook two more minutes and serve with italian bread. Also, sausage can be added for a main meat dish. Serve with slotted spoon.

  2. French Sauce

  3. 1/2 c. white wine

  4. lemon

  5. 2 oz. butter

  6. 1 tsp. chicken bouillon.

  7. combine all in small saucepan and bring to boil. Adjust taste to own liking.
